  • 1 whole egg plus 2 large egg yolks
  • 1 small clove garlic 
  • 2 cups olive oil 
  • 3 tablespoons lemon juice 
  • 1/2 cup grated grana padano cheese 
  • Salt and freshly ground pepper


In food processor, combine the egg, yolks and garlic. With the processor running, slowly add the oil in a steady stream, thinning down with the lemon juice to keep the emulsion from breaking. Add in the cheese, and process until combined and the texture is smooth. Season with salt and pepper.

Consumption of raw or undercooked eggs, shellfish and meat may increase the risk of foodborne illness.
