Ingredients

  • 1/2 cup quinoa, cooked
  • 1 tablespoon peanut butter
  • 4 thin slices fresh fruit 

Directions

Mix the quinoa and peanut butter in a bowl until combined. Place one quarter of the mixture in your palms to form an oval shape like a piece of nigiri. Finish with the rest of the mixture to make 4 pieces. Top each quinoa nigiri with a slice of fresh fruit.
