12 cupcakes


  • 1 1/4 pounds ground turkey
  • 1/2 cup panko breadcrumbs 
  • 1/2 cup grated carrot
  • 1/2 cup diced onion 
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 large egg, lightly beaten
  • 1 clove garlic, minced
  • Salt and pepper
  • Mashed potatoes, for icing
  • 1/2 cup finely diced colored bell peppers


Special equipment: a cupcake tin with twelve 4-ounce cups

Preheat the oven to 350 degrees F.

Mix the ground turkey, breadcrumbs, carrot, onion, ketchup, Worcestershire sauce, egg, garlic and some salt and pepper in a large bowl.

Divide the mixture among twelve 4-ounce cupcake tin cups, leaving the top domed. Bake until the internal temperature registers 165 degrees F, about 35 minutes.

To serve, spoon the mashed potatoes over the cupcakes or fill a pastry bag and pipe as frosting. Sprinkle with the bell peppers.
