Fruit Burritos

Ingredients

1 1/2 cups dry figs, cut into small dice

Four 8-inch low-fat flour tortillas

1 egg, lightly beaten

1 tablespoon sugar 

1/2 cup fresh strawberries, cut into small dice

1 tablespoon honey

1 tablespoon sliced mint 

1/4 cup Greek yogurt

Directions

  1. Preheat the oven 350 degrees F.
  2. Place 1/2 cup of the figs in each tortilla and roll up tightly. Brush with the egg and sprinkle with the sugar. Bake until golden brown, 10 to 15 minutes.
  3. Mix the honey with the remaining figs, the strawberries, honey and mint. To serve, top each burrito with 1 tablespoon of the Greek yogurt and the fruit salsa.
