Beer Poached Boudin with Grain Mustard

Ingredients

1 (12-ounce) bottle amber beer (recommended: Abita)

1/2 cup water

2 cloves garlic, chopped

1 shallot, chopped

2 pounds boudin sausage

Serving suggestion: Serve the boudin hot with grain mustard.

Directions

  1. In a covered saute pan, bring the beer, water, garlic and shallot to a simmer. Add the boudin sausage, cover and simmer for 15 minutes.
  2. Remove the boudin from the poaching liquid and discard the liquid. Serve the boudin hot with grain mustard.
