Simple syrups are the heart and soul of most flavored cocktails. Start with your favorite flavor, and you'll barely need to add anything to create the perfect drink. These syrups are also good to have on hand to flavor seltzer.

Ingredients

  • 3/4 cup sugar
Ginger Simple Syrup:
  • 1 cup roughly chopped peeled ginger
Lemongrass Simple Syrup:
  • 1/2 cup chopped lemongrass
Tangerine Simple Syrup:
  • Peels of 3 tangerines, removed with a vegetable peeler
Raspberry Simple Syrup:
  • 1 cup raspberries, smashed
"Gin" Simple Syrup:
  • 1/4 cup chopped cucumber
  • 2 tablespoons lightly crushed Juniper berries
  • 1 tablespoon lightly crushed coriander seeds

Directions

Combine the sugar, 3/4 cup water and the flavoring ingredients of your choice in a small saucepan. Bring the mixture to a simmer, lightly muddling the solids and stirring until the sugar dissolves. Remove from the heat and let stand until cool before straining. 

Cook's Note

For the raspberry syrup, allow the mixture to simmer briskly an additional 3 minutes before removing from the heat.
