G. Garvin's Fried Brussels Sprouts

3 cups vegetable oil

1 pound Brussels sprouts, trimmed and halved lengthwise 

Kosher salt and freshly ground black pepper 


  1. Heat the vegetable oil in a deep frying pan over medium-high heat.
  2. Carefully place the Brussels sprouts in the hot oil and cook until nicely browned and just cooked through, 3 to 5 minutes. (Have a lid nearby in case the oil sputters.)
  3. Drain on paper towels. Season with salt and pepper. Serve.
