Ingredients

Canola oil, for frying eggs

4 goose eggs

Mayonnaise, for serving

8 slices Texas toast, toasted

8 strips bacon, cooked crisp

4 slices Havarti cheese

4 slices tomato

2 handfuls arugula

Directions

  1. Heat the oil in a large nonstick pan over medium heat. Add the eggs and cook sunny-side-up, until the whites are set and the yolks are still runny. Spread the mayonnaise on each piece of Texas toast. Place some bacon, Havarti, tomato and fried egg on 4 pieces of toast. Top with the arugula and the remaining 4 pieces of toast.
