Grethe Petersen's Curried Pickled Herring

1/2 cup seedless green grapes, halved, plus more for garnish

1/2 cup mayonnaise 

1/2 cup finely diced red onions

1 teaspoon curry powder 

2 apples, finely diced (about 1 pound) 

10 ounces pickled herring, drained and spices removed

10 ounces pickled herring, drained and spices removed 

Buttered rye bread, for serving


  1. Mix together the grapes, mayonnaise, onions, curry powder and apples in a medium bowl. Gently toss the pickled herring with the curried mayonnaise mixture until thoroughly combined. Refrigerate for 30 minutes prior to serving.
  2. Serve on buttered rye bread and garnish with green grapes.
