Grethe Petersen's Mustard Pickled Herring

Ingredients

1 cup sour cream

1/2 cup thinly sliced yellow onions

1 tablespoon heavy cream 

1 tablespoon Dijon mustard

1 tablespoon sugar 

Dash of white pepper 

2 apples, peeled and finely diced (about 1 pound) 

10 ounces pickled herring, drained and spices removed 

10 ounces pickled herring, drained and spices removed

Buttered rye bread, for serving

Directions

  1. Mix together the sour cream, onions, heavy cream, mustard, sugar, white pepper and apples in a medium bowl. Gently toss the pickled herring with the mustard mixture until thoroughly combined. Refrigerate for 2 hours prior to serving.
  2. Serve on buttered rye bread.
