  • 2 cups old-fashioned rolled oats
  • 1 cup sliced almonds
  • 3 tablespoons coconut oil
  • 3 tablespoons honey
  • 1 tablespoon vanilla extract
  • 1 tablespoon ground cinnamon
  • Pinch salt
  • 3/4 to 1 cup roughly-chopped organic dried cherries


Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.

Combine the oats and almonds in a medium bowl and set aside.

Melt the coconut oil in a separate bowl in the microwave, then add the honey, vanilla, cinnamon and salt and stir to combine. Pour the coconut oil-honey mixture over the oats and stir to combine.

Transfer the granola to the prepared baking sheet and spread in one layer. Bake, stirring the granola every couple of minutes, until it has browned evenly, 20 to 30 minutes. Let cool, then toss with the dried cherries.
