Fennel and Apple Salad

2 green apples, thinly sliced

2 celery stalks, thinly sliced

1 fennel bulb, thinly sliced

2 tablespoons grated Parmesan

1 tablespoon chopped fresh dill

1 tablespoon chopped fresh thyme

Juice of 1 lemon

Drizzle of olive oil

Sea salt and black pepper


  1. Toss the apple, celery and fennel slices with the Parmesan, dill and thyme. Drizzle with lemon juice and olive oil. Add a pinch of sea salt and black pepper.
