Ingredients

  • 8 ounces cream cheese, softened
  • 3 tablespoons mustard (Dijon or spicy brown) 
  • 1 tablespoon mayonnaise
  • One 4-ounce jar pimientos, drained and chopped
  • 1 1/2 cups grated sharp or mild Cheddar
  • 1/2 teaspoon black pepper
  • Salt, optional 
  • 12 slices bread
  • Assorted vegetables: sliced olives, sliced cucumber, bell pepper slices, grated carrot, sprouts

Directions

Combine the cream cheese, mustard, mayonnaise and pimentos in a bowl and mix together. Stir in the Cheddar and black pepper. Taste to see if you need salt. Will keep for a week, refrigerated.

Spread the sliced bread with the pimiento cheese. Make faces using olives for eyes, cucumbers for ears, bell pepper for smiles and carrots and sprouts for hair. Use your imagination to make animals or funny faces.

Cook's Note

Try making pimento cheese grilled cheese sandwiches, or topping burgers with pimiento cheese.
