Crushed ice, for serving

2 chunks pineapple, plus 1 slice for garnish

1 lemon wedge

1 orange wedge

2 ounces cognac

3/4 ounce passion fruit syrup (equal parts unsweetened passion fruit juice and demerara sugar or natural brown sugar)

1 dash bitters, such as Peychaud's


  1. Fill a wine glass with crushed ice and set aside
  2. Muddle the pineapple, lemon and orange in a shaker tin. Add the cognac, passion fruit syrup, bitters and crushed ice. Roll the ingredients between two cocktail tins 4 to 5 times and pour all the contents back into the wine glass. Garnish with a slice of pineapple.
