  • 10 tomatoes, chopped
  • 1 red habanero chile, chopped
  • 2 1/2 cups fresh cilantro leaves, finely chopped
  • 2 1/2 cups fresh parsley leaves, finely chopped
  • 2 1/2 cups finely chopped scallions
  • 1/4 cup white vinegar 
  • 2 teaspoons lime juice 
  • 2 teaspoons vegetable oil 
  • Kosher salt 


Add the tomatoes, habanero, cilantro, parsley and scallions to a large bowl and stir to combine.

In a second bowl, whisk together the vinegar, lime juice and oil. Pour over the tomato mixture and stir to combine. Add salt to taste. Cover and refrigerate for 20 to 25 minutes prior to serving.
