Mandarin Cranberry Sauce

Ingredients

1 1/2 cups sugar

1 cup freshly squeezed orange or tangerine juice 

Pinch kosher salt 

Two 12-ounce bags fresh or frozen cranberries 

1 tablespoon vanilla extract 

4 mandarin oranges or 1 orange, zested

Directions

  1. Combine the sugar, orange juice, salt and 1/2 cup water in a medium saucepan and bring to a boil. Add the cranberries, vanilla extract and orange zest and simmer on low heat until the cranberries have broken down and created a sauce, 15 to 20 minutes.
  2. Serve warm or at room temperature.
