Apples and Leeks

4 tablespoons olive oil

2 leeks, sliced into rounds and soaked in cold water to remove grit

3 gala apples, peeled, cored and chopped into 1-inch pieces

2 tablespoons fresh parsley leaves, roughly chopped

Salt and freshly ground black pepper


  1. Heat the oil in a saute pan. Add the leeks and cook for 5 to 7 minutes. Add the apples and cook until they soften, 5 minutes. Add the parsley and season with salt and pepper.
