Smashed Potatoes

2 pounds unpeeled baby red potatoes

2/3 cup freshly grated Parmesan

1/2 cup olive oil

3 scallions, finely chopped

Salt and freshly ground black pepper


  1. Place the potatoes in a large pot of water. Cover and bring the water to a boil. Continue boiling until the potatoes are tender, about 15 minutes. Drain and return the potatoes to the pot. Coarsely mash the potatoes. Using a large fork, stir in the Parmesan, oil and scallions. Season the potatoes with salt and pepper, and then serve.
