Lamb Meatball, Mediterranean style

Ingredients

2 pounds ground lamb shoulder or leg

1/4 cup bread crumbs

1/4 cup chopped walnuts

1/4 cup chopped raisins

2 eggs

1/4 bunch fresh mint leaves, chopped

1/4 bunch fresh parsley leaves, chopped

1 1/2 tablespoons salt

Freshly ground black pepper

Directions

  1. Preheat the oven to 400 degrees F. Combine the ground lamb, bread crumbs, walnuts, raisins, eggs, mint, parsley, salt, and black pepper in a large bowl and mix thoroughly until completely consistent. Roll the meat into golf ball-size portions, about 2-ounces each. Place the meatballs on a well-oiled sheet tray. Roast the meatballs in the oven for 20 minutes until just firm. Serve with your favorite sauce and enjoy.
