4 russet potatoes

1 medium onion

1/4 cup matzo meal

2 eggs

Salt and pepper to taste


  1. Julienne the potatoes on a mandoline. Then mix with the rest of the ingredients. Saute in vegetable oil in 2 inch piles over medium high heat. When crispy and golden brown, flip over. Cook until crisp and golden. Then bake in the oven for ten minutes at 350 degrees.
