1 large potato, boiled and sliced 

2 tablespoons heavy cream

1 egg

Fresh dill, chopped

Kosher and freshly ground pepper

Kosher and freshly ground pepper 

4 ounces gravad lax (cured salmon)

Mixed greens, for serving


  1. Melt some butter in a pan, and then add the potato slices. Whisk together the cream and egg, and then pour over the potatoes. Season with dill, salt and pepper, cover and fry until the egg sets, about 3 minutes. 
  2. Top with the gravad lax and serve with some greens.
