Ingredients

  • 2 roasted red and yellow bell peppers, peeled, seeded and sliced
  • 2 roasted poblano peppers, peeled, seeded and sliced
  • 4 plum tomatoes, skin charred and chopped
  • 1/2 cup chopped cilantro leaves
  • 1/4 cup olive oil
  • 1 lime
  • Salt  

Directions

Toss all ingredients together and season with salt. Serve immediately.
