2 slices sourdough bread
1 tablespoon herbed fresh goat cheese (preferably from Soledad¿s Goat Farm)
1 large basil leaf
One 3-finger pinch spring mix salad greens
1 medium chicken breast, grilled
1 slice roasted red bell pepper
This recipe also makes great mini sandwiches; just cut into smaller portions. Or omit the bread and add more spring mix for a carb-free option.
