Ingredients

  • 2 slices sourdough bread
  • 1 tablespoon herbed fresh goat cheese (preferably from Soledad¿s Goat Farm)
  • 1 large basil leaf
  • One 3-finger pinch spring mix salad greens
  • 1 medium chicken breast, grilled
  • 1 slice roasted red bell pepper

Directions

Spread the slices of bread with the goat cheese. Top one slice with the basil, spring mix, chicken and roasted pepper. Close the sandwich and seal with two sandwich picks. Slice in half diagonally. Serve.

Cook's Note

This recipe also makes great mini sandwiches; just cut into smaller portions. Or omit the bread and add more spring mix for a carb-free option.
