Yield:
4 servings

Ingredients

  • 1/4 cup of butter
  • 1 cup flour
  • 3/4 cup milk
  • 1/3 cup Maple Syrup, recipe follows
  • 2 Tbs. Maple Cream Brandy
  • Pinch of salt
Maple Syrup:
  • 3/4 cup of maple syrup
  • 1/4 cup of Maple Whiskey

Directions

CREPES: Combine all of the ingredients together in a blender and blend until smooth. Place a frying pan over medium heat. Spoon about 1/4 cup of the mixture into the pre-heated frying pan; the mixture will make four crepes. Once the top of the crepe begins to bubble flip it over onto the other side until golden brown. Keep the crepes warm on a heated plate or in a low temperature oven.

SYRUP: Re-heat the frying pan over medium heat.  Add the maple syrup and bring to a boil, stirring occasionally. Add the maple whiskey and flambe. Once the alcohol has burned off, place the crepes into the pan and simmer for 3 minutes.

To Plate: Place on a plate with whipped cream and/or maple sugar and enjoy!

Cook's Note

Prepare the crepes first then the syrup.
