3 cups heavy cream

1 cup egg yolks

1/2 cup sugar

2 tablespoons maple flavoring

1 cup 70-percent dark chocolate

1 cup milk chocolate

2 tablespoons crispy chocolate pearls

Directions

  1. In a medium saucepot set over medium heat, add the cream and bring to a gentle boil. In a medium bowl combine the egg yolks, sugar and maple flavoring. Place the dark chocolate, milk chocolate and crispy chocolate pearls in a separate bowl. Add half of the hot cream to the egg mixture and whisk.
