Ingredients

Oil, for frying

1/2 cup mayonnaise 

Chipotle paste, to taste 

Lime juice, to taste 

6 Cheddar perogies 

2 tablespoons shredded aged Cheddar 

Sour cream, for serving 

Mild salsa, for serving 

Fresh cilantro, for serving

Directions

Special equipment:
a deep fryer
  1. Heat some oil in a deep fryer. Whisk together the mayonnaise, chipotle paste and lime juice in a small bowl.
  2. Deep fry the perogies until crispy and transfer to a plate. Sprinkle with the Cheddar while still hot; zigzag with the mayonnaise mixture and top with some sour cream, salsa and cilantro.
