Vanilla Base Dough (recipe follows)
2 cups (12 ounces) semisweet chocolate chunks
2 cups (4 ounces) bittersweet chocolate curls or shavings
2 1/2 cups (7 1/2 ounces) old-fashioned rolled oats
2 cups (8 ounces) all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups (12 ounces) unsalted butter, at room temperature
1 cup (7 ounces) granulated sugar
1 cup (7 ounces) light brown sugar
2 large eggs, at room temperature
1/2 tablespoon pure vanilla extract
Dough can be stored, airtight, in the refrigerator for up to a week or in the freezer for up to a month.
