Ingredients

Pork and Marinade:

1/4 cup smoked paprika

1/4 cup brown sugar

2 tablespoons kosher salt

2 tablespoons cracked black pepper

2 teaspoons dry mustard

1 teaspoon cayenne pepper

3 pounds boneless pork shoulder

Vinegar Sauce:

3/4 cup ketchup

3/4 cup apple cider vinegar

1/2 cup maple syrup

1/2 cup minced fresh pineapple

1 teaspoon cayenne

1 teaspoon Dijon mustard

1 teaspoon sea salt

4 brioche buns, lightly toasted

Plantain chips, for serving

Directions

  1. For the pork and marinade: In a bowl, mix together the paprika, brown sugar, salt, pepper, mustard and cayenne.
  2. Put the pork in a resealable plastic bag, add half of the dry marinade, seal the bag and rub the marinade into the meat. Refrigerate overnight up to 24 hours.
