Mixed Green Salad with Mozzarella and Vinaigrette Dressing

Vinaigrette Dressing:

1 tablespoon grapeseed oil

1 tablespoon extra-virgin olive oil 

1 tablespoon agave syrup

1 tablespoon minced garlic 

1/2 teaspoon minced fresh oregano 

1/2 teaspoon minced fresh parsley 

1/4 teaspoon minced fresh rosemary 

1/4 teaspoon minced fresh thyme 

Pinch cayenne 

Juice of 1 lemon

Sea salt and black pepper

Mixed Green Salad:

4 cups mixed baby greens

2 cups arugula 

1/4 cup thinly sliced red onion 

Seasoning salt 

One 8-ounce package mozzarella balls 


  1. For the vinaigrette dressing: In a small bowl, mix together the grapeseed oil, olive oil, agave, garlic, oregano, parsley, rosemary, thyme, cayenne, lemon juice, 1/4 teaspoon salt and black pepper to taste. Set aside.
  2. For the mixed green salad: Combine the mixed greens, arugula and red onions in a large bowl. Sprinkle in 1/8 teaspoon seasoning salt and toss gently. Sprinkle with another 1/8 teaspoon seasoning salt, then drizzle with the vinaigrette and toss again. Top with the mozzarella balls.
