3 tablespoons unsalted butter

2 1/2 pounds Yukon Gold potatoes, peeled, cubed and parboiled 

1 large white onion, thinly sliced 

Sea salt and black pepper


  1. Melt the butter in a large frying pan over medium-high heat. Add the potatoes and onions, cover, and cook for 10 minutes. Flip the potatoes and cook until tender, another 5 minutes. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
