Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 3 tablespoons light brown sugar
  • 2 tablespoons wheat germ
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 cups buttermilk
  • 1/4 cup (4 tablespoons) unsalted butter, melted
  • 2 eggs
  • 3/4 cup chopped pecans
  • Canola oil spray, for spraying
  • Maple syrup, for serving

Special equipment: a waffle iron

Preheat a waffle iron. Combine the flour, whole wheat flour, light brown sugar, wheat germ, baking powder, baking soda and salt in a large bowl. In a separate medium bowl, whisk together the buttermilk, melted butter and eggs. Pour the wet ingredients into the dry ingredients and stir until just combined. Add the pecans and stir just to combine.

Spray the waffle iron lightly with canola oil spray. Ladle the batter into the waffle iron and cook until golden brown according to the manufacturer's instructions. Transfer to a plate and keep warm. Make the remaining waffles and serve with maple syrup.
