Pork Chop with Apple-Cran Gastrique

4 thick-cut pork chops (preferably natural pasture raised), at room temperature

Kosher salt and freshly ground black pepper

Apple-Cran Gastrique, for serving, recipe follows

Apple-Cran Gastrique

1/2 cup organic sugar

2 tablespoons balsamic vinegar

1 tablespoon red wine vinegar

1/2 teaspoon salt

1/2 teaspoon ground white pepper

2 organic Red Delicious apples, finely chopped

One 12-ounce bag fresh organic cranberries


  1. Preheat the oven to 450 degrees F. 
  2. Sprinkle the pork chops liberally with salt and pepper. Heat a large cast-iron skillet over high heat until very hot. Place the chops into the skillet and sear on one side, and then flip and transfer the skillet into the oven. Roast until the internal temperatures reaches 145 degrees F, about 8 minutes. Loosely cover the chops with tin foil and let rest. 
  3. To serve, lightly sprinkle with more salt and pepper and a generous drizzle of the Apple-Cran Gastrique. 

Apple-Cran Gastrique

  1. Combine the sugar, balsamic vinegar, red wine vinegar, salt, white pepper, apples, cranberries and 1 cup water in a large saucepan. Simmer over medium heat until combined and slightly reduced, about 10 minutes. Strain the mixture through a mesh strainer into a bowl. Let the gastrique cool to room temperature before serving.
