Ingredients

Dressing:
  • 1/2 small onion, grated
  • 1/4 cup ketchup 
  • 1/4 cup red wine vinegar  
  • 3 tablespoons honey 
  • 1 teaspoon Worcestershire sauce  
  • 1/2 teaspoon paprika
  • 1/2 cup extra-virgin olive oil  
  • Salt and pepper 
  • Salt and pepper
Salad:
  • 8 cups mixed baby lettuce
  • 1 cup sliced English cucumbers
  • 1 cup sliced grape tomatoes  
  • 1/3 cup dried cranberries 
  • 1/4 cup pistachios, toasted 
  • 1/4 cup chopped walnuts, toasted  

Directions

For the dressing: In a medium bowl, whisk together the onion, ketchup, vinegar, honey, Worcestershire and paprika. Slowly drizzle in the oil while whisking. Season with salt and pepper.

For the salad: In a large salad bowl, combine the lettuce, cucumbers, tomatoes, cranberries, pistachios and walnuts. Toss well. Serve with the dressing on the side.
