Red Onion Sauce:

2 tablespoons canola oil

2 Spanish onions, minced

Kosher salt and freshly ground black pepper

1/4 cup ketchup

Dash of hot sauce

Pinch of ground cinnamon

Turkey Kielbasa:

Canola oil, for coating the grill pan

3 packages smoked turkey kielbasa (14- to 16-ounces each), each cut into 2 hot dog-sized pieces (reserve the curved center section of the kielbasa for another use)

To serve:

6 hot dog rolls

Sauerkraut, for serving

Yellow mustard, for serving

  1. For the red onion sauce: Heat a medium skillet over medium heat with the canola oil. Add the onions, sprinkle with salt and pepper and saute until softened and translucent, about 8 minutes. Add the ketchup, hot sauce, cinnamon and 1/4 cup water and simmer until the liquid is half reduced, about 10 minutes more.
  2. For the turkey kielbasa: Oil a grill pan over medium heat and add the kielbasa. Brown on all sides, 5 to 8 minutes, and remove from the heat. Serve the kielbasa on hot dog rolls topped with the sauerkraut, red onion sauce and yellow mustard.
