Spice-Roasted Colorful Carrots

3 pounds real baby carrots or regular carrots (rainbow if you can find them) cut into matchsticks

1/4 cup olive oil

3 tablespoons brown sugar

1 1/2 tablespoons cumin

Pinch chili powder

Kosher salt


  1. Preheat the oven to 400 degrees F.
  2. In a bowl, mix together the olive oil, brown sugar, cumin and chili powder; season with salt. Toss the carrots in the flavored oil, then spread them out on a parchment- or foil-lined baking sheet. Bake until browned and tender, 30 minutes to 1 hour
