4 ripe persimmons, tops removed, peeled and diced

1/4 cup fresh mint leaves, torn by hand

1/4 cup brown sugar

1 tablespoon lime zest

Pinch salt


  1. Place the diced persimmons in a bowl. Add the mint, brown sugar, lime zest and salt. Toss and serve.
