Ingredients

  • 4 ripe persimmons, tops removed, peeled and diced
  • 1/4 cup fresh mint leaves, torn by hand
  • 1/4 cup brown sugar
  • 1 tablespoon lime zest
  • Pinch salt

Directions

Place the diced persimmons in a bowl. Add the mint, brown sugar, lime zest and salt. Toss and serve.
