Roti Crepes with Ri-Cottage Cheese, Roasted Apple Chutney and Pickled Radish

Ri-Cottage Cheese Filling: 

1 cup smoked paneer cheese, small dice

1 cup fresh whole-milk ricotta cheese

3 tablespoons fresh curry leaves, finely chopped

Salt and freshly ground black pepper, to taste

Roti Crepes:

1 1/2 cups all-purpose flour

2 tablespoons granulated sugar

1/4 teaspoon toasted ground black cardamom

Pinch salt

Zest of 1/2 lemon

1 cup whole milk

3 eggs

One 12-ounce bottle lager beer

Ghee, for cooking the crepes

Pickled Radish and Micro Greens, for serving, recipe follows

Roasted Apple Chutney, for serving, recipe follows

Pickled Radish and Micro Greens:

1 cup icicle radishes (about 1 bunch), unpeeled, washed, trimmed and quartered

Salt, to cover the radishes (about 1 cup)

1 teaspoon coriander seed

1 teaspoon cumin seed

1 teaspoon whole fenugreek

3 pods black cardamom

1 bay leaf

1 cup ice wine vinegar

2 tablespoons sugar

1 clove garlic, smashed

1 ounce micro greens, preferably tangerine greens

Roasted Apple Chutney:

2 tablespoons mustard oil

2 Granny Smith apples, unpeeled and finely diced

1/4 cup currants

1/4 cup seasoned rice wine vinegar

2 tablespoons fresh ginger, peeled and minced

2 tablespoons brown sugar

2 tablespoons Worcestershire sauce

1 teaspoon pickle masala

2 bay leaves

2 shallots, finely diced


  1. For the cheese filling: Mix the paneer, ricotta and curry leaves in a medium bowl, and season with salt and pepper. Set aside.
  2. For the roti crepes: Combine the flour, sugar, cardamom, salt and lemon zest in a large bowl. Whisk in the milk, eggs and beer to make a loose, smooth crepe batter. 
  3. Heat approximately 1 tablespoon ghee in a 6-inch nonstick skillet, and ladle in the batter. Working quickly, swirl the batter around the pan to make a thin, lightly-toasted crepe. Lay the finished crepes on a plate and cover with a towel to keep warm. 
  4. To serve, roll the cheese filling in the roti crepes and serve topped with Roasted Apple Chutney and Pickled Radishes and Micro Greens.
  5. For Pickled Radish and Micro Greens:
  6. Bury the radishes in salt and let sit 2 hours. Rinse in cold water to remove the salt and transfer to a medium bowl. 
  7. Toast the coriander, cumin, fenugreek, black cardamom and bay leaf in a small dry skillet until fragrant, 2 to 3 minutes. Stir in the vinegar, sugar and garlic just until the sugar dissolves. Pour the vinegar mixture over the radishes and let marinate 4 hours or up to overnight. Yield: 2 cups.
  8. For Roasted Apple Chutney:
  9. Heat the mustard oil in a 3-quart saucepan over medium-high heat until smoking, and then saute the apples until lightly browned. Stir in the currants, vinegar, ginger, sugar, Worcestershire, pickle masala, bay leaves and shallots and cook over medium heat, stirring occasionally, until the apples are tender, 25 minutes. Discard the bay leaves and set aside to cool completely. Yield: 2 cups.

Cook’s Note

You can find ice wine vinegar at specialty stores, but it can be substituted with champagne vinegar. Icicle radishes can be substituted with red radishes.
