Chilled Pineapple and Watermelon Skewers with Mint Syrup

Juice of 1 lemon

1 to 2 tablespoons honey 

1 tablespoon chopped fresh mint 

1 ripe pineapple, peeled and cut into 3/4-inch cubes 

1/4 ripe watermelon, peeled and cut into 3/4-inch cubes 


Special equipment:
8 to 10 bamboo skewers, cut in half
  1. Heat the lemon juice, honey and mint together in a small saucepan. As soon as the honey has dissolved, remove from the heat and set aside.
  2. Thread the fruit onto the bamboo skewers and place on a serving platter. Refrigerate until ready to serve. Drizzle over the mint syrup just before serving.
