Ingredients

  • Juice of 1 lemon
  • 1 to 2 tablespoons honey 
  • 1 tablespoon chopped fresh mint 
  • 1 ripe pineapple, peeled and cut into 3/4-inch cubes 
  • 1/4 ripe watermelon, peeled and cut into 3/4-inch cubes 

Directions

Special equipment: 8 to 10 bamboo skewers, cut in half

Heat the lemon juice, honey and mint together in a small saucepan. As soon as the honey has dissolved, remove from the heat and set aside.

Thread the fruit onto the bamboo skewers and place on a serving platter. Refrigerate until ready to serve. Drizzle over the mint syrup just before serving.
