Whiskey, Lime and Mint Ice Pops

1/4 cup honey

100 milliliters (3.5 ounces) lime juice 

1 tablespoon chopped fresh mint 

50 milliliters (1.5 ounces) whiskey 

250 milliliters (8.5 ounces) soda water 


  1. Heat the honey and lime juice in a small pot over medium-low heat until the honey has dissolved into the lime juice. Adjust to taste by adding extra honey if you prefer.
  2. Stir in the mint, whiskey and soda water; adjust to taste again. Pour into ice pop molds.
  3. Freeze for at least 3 hours, or until firm.
