Zanzibari Iced Tea

4 cardamom pods, bruised until cracked open

1 stick cinnamon, broken in half 

1 stalk lemongrass, bruised 

Small handful fresh mint 

1/4 cup honey 

Chopped stone fruit (apricots, peaches or plums), for serving


  1. Combine the cardamom, cinnamon, lemongrass, mint and honey in a teapot or small saucepan. Add 2 cups of just-boiled water and let steep for 4 to 5 minutes. Strain and leave to cool.
  2. Serve over ice and garnish with chopped stone fruit.
