SB Truck Street Corn

4 ears corn, husked

1/4 cup extra-virgin olive oil 

1 tablespoon smoked paprika 

1 tablespoon kosher salt 

1 tablespoon freshly ground black pepper 

1/2 cup mayonnaise 

1/2 cup crumbled feta cheese

Zest of 1 lime 

Chopped fresh cilantro, for garnish 

Chopped fresh mint, for garnish 


  1. Preheat a grill over medium-high heat.
  2. Roll the ears of corn in the olive oil in a shallow plate, then toss with the smoked paprika, salt and pepper. Grill the corn until charred on all sides, about 6 minutes.
  3. Spread the corn liberally with the mayonnaise. Top with the feta cheese and lime zest. Garnish with the cilantro and mint.
