7-Colour Rice

1 tablespoon olive oil

2 cloves garlic, chopped

1 onion, finely chopped

250 grams (9 ounces) smoked bacon, chopped

1 green bell pepper, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 heaping tablespoon mild curry powder

400 grams (14 ounces) cooked basmati rice

2 tablespoons fresh thyme leaves, chopped

Salt and freshly ground black pepper


  1. Heat the oil in a large pan and saute the garlic and onions until slightly soft, 2 minutes. Add the bacon and cook until slightly crispy. Add the peppers and cook until just starting to soften, 2 minutes. Add the curry powder and cook for a further 30 seconds or so. Add the rice and thyme and stir until combined. Season to taste and keep warm, covered with foil or a lid, until serving time.
