  • Butter, for greasing
  • 3/4 cup dried breadcrumbs
  • 1/4 cup finely grated Parmesan cheese
  • 1 tablespoon dried oregano
  • 1 1/2 teaspoons chicken stock powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 medium eggs
  • 2 large cloves garlic, grated
  • 1 tablespoon very finely chopped onion (1/4 onion)
  • 3 chicken breast halves


Preheat the oven to 350 degrees F. Lightly grease a baking sheet with butter.

In a bowl, mix the breadcrumbs with the Parmesan, oregano, chicken stock powder, salt and pepper. Spread on a flat plate.

Whisk the eggs with the garlic and onion, and then pour into a wide dish set next to the breadcrumb mixture.

Cut the chicken breasts into strips. Coat the strips in breadcrumbs, then dip in egg and, lastly, coat in crumbs again. As you go, place the breaded strips on the prepared baking sheet.

Bake for 5 minutes. Turn, and bake for another 2 minutes, or until done, to crisp other side.

Serve warm or cold.
