Special equipment:
a 10-inch round baking pan with 2-inch-high sides
  1. For the sauce: Work the tomatoes through a food mill into a large bowl. Mix in the oil, pepper and salt. Gently stir in the basil.
  2. For the pizza: Preheat the oven to 500 to 550 degrees F. Lightly oil a 10-inch round baking pan.
  3. Place the dough in the pan and press it down evenly. Drizzle with olive oil and sprinkle the garlic, Parmesan and oregano over the top. Spoon 5 ounces of the pizza sauce over the dough, and then layer the sausage and salami slices. Top with the mozzarella and a drizzle of olive oil. Cover the pan with foil and bake for 15 minutes. Remove the foil and bake until golden brown and bubbly, 5 minutes.
