Ingredients

  • 4pounds smoked whole whitefish, deboned and flaked
  • 1 to 2 cups sweet pickle relish
  • 1 cup chopped green onion tops
  • 4 to 5 good dashes hot sauce, such as Louisiana Hot Sauce
  • 2medium Vidalia onions, finely diced
  • Juiceof 1/2 lemon
  • Salad dressing or mayonaise, for holding pate together
  • Crackers,for serving, optional
  • Cucumberslices, for serving, optional

Directions

Mix together the whitefish, pickle relish, green onions, hot sauce, onions and lemon juice in a large bowl. Toss in salad dressing until fully incorporated. Serve with crackers and cucumbers if desired.
