S'mores Waffle

Chocolate Ganache:

1 cup chocolate morsels

1 cup heavy whipping cream

Marshmallow Fluff:

1 cup light corn syrup

1 cup confectioners' sugar, plus more for garnish

1/2 tablespoon vanilla extract

1/4 teaspoon salt

1 1/2 egg whites

2 waffles

1 graham cracker, crushed into small pieces


Special equipment:
Kitchen torch
  1. For the ganache: Bring a pot of water to a simmer, and place another bowl on top, without touching the water. Add the chocolate and cream and mix together until melted and combined. 
  2. For the fluff: Beat together the corn syrup, sugar, vanilla, salt and egg whites on high speed for 10 minutes.
  3. For assembly: Cover the waffles with graham cracker pieces, followed by the chocolate ganache. Spread the marshmallow fluff over half of the waffles, and toast with a kitchen torch. Fold the waffles over, so the toppings are now in the middle. Top with powdered sugar.
