Sonny Young's Pecan Veggie Balls

Ingredients

4 cups seasoned breadcrumbs

4 cups pecan meal 

4 cups shredded Cheddar

12 eggs 

1/2 cup olive oil 

2 cups warm tomato sauce 

Directions

  1. In a large bowl, mix together the breadcrumbs, pecan meal and cheese with your hands. Then mix the eggs in a large bowl and add to the pecan mixture, and mix until thoroughly incorporated.
  2. With your hands, shape the mixture into 1 1/2-inch pecan veggie balls and set on a sheet tray.
  3. Heat the olive oil in a pan over medium-high heat. Fry each ball until golden brown, 3 to 4 minutes on each side. Remove from the heat, cover in tomato sauce and serve.
