Blend the honey and pine nuts in a food processor. Set aside until room temperature.
Pan-fry the burger patties over medium-high heat until seared and slightly crisp, about 2 minutes per side. Cook longer for medium-well to well doneness.
Without cleaning the pan, toast the buns in the pan until they're warm and toasted.
Place a burger patty on each bun. Smear 1 tablespoon of the goat cheese on each burger patty, and then top with 1 tablespoon of the diced olives and 3 or 4 strips of the roasted red peppers.
Spread the honey and pine nut mixture on the top buns.
