Spanish Burger

Ingredients

1/2 cup honey

1/4 cup pine nuts 

Four 1/3-pound beef patties 

4 brioche buns 

4 tablespoons soft goat cheese 

4 tablespoons kalamata olives, pitted and diced 

1 jar roasted red peppers, cut into 1/2-inch strips 

Directions

  1. Blend the honey and pine nuts in a food processor. Set aside until room temperature.
  2. Pan-fry the burger patties over medium-high heat until seared and slightly crisp, about 2 minutes per side. Cook longer for medium-well to well doneness.
  3. Without cleaning the pan, toast the buns in the pan until they're warm and toasted.
  4. Place a burger patty on each bun. Smear 1 tablespoon of the goat cheese on each burger patty, and then top with 1 tablespoon of the diced olives and 3 or 4 strips of the roasted red peppers.
  5. Spread the honey and pine nut mixture on the top buns.
