Spinach Salad with Strawberries, Trail Mix and Citrus Vinaigrette

Juice of 1 lemon

Juice of 1 orange

Juice of 1 lime

1/2 cup extra-virgin olive oil

1 teaspoon salt

1 teaspoon ground black pepper

10 to 12 ounces pre-washed baby spinach

2 cups strawberries, hulled and sliced

1/2 cup trail mix


  1. In a small bowl, add the lemon, orange and lime juices. Whisk in the olive oil in a slow, steady stream until emulsified. Season with the salt and pepper.
  2. Put the spinach and strawberries in a large bowl and toss with enough vinaigrette to coat. Sprinkle with the trail mix, then toss again and serve immediately.
