Ingredients

  • 1 cup tahini or 1/2 jar tahini paste
  • 1 1/2 to 2 cups water
  • 2 tablespoons lemon juice
  • 1/2 teaspoon cumin
  • 1 tablespoon white vinegar
  • 3 to 5 garlic cloves, minced
  • Salt
  • Chopped parsley or olive slices, to garnish (optional)

Directions

Add tahini, water, lemon juice, salt, cumin, vinegar and garlic, season with salt, then stir thoroughly in a mixing bowl until blended and smooth. You may also use a food processor or blender at a slow speed. Garnish with parsley or olive slices. Serve with baked pita chips and veggies.

Cook's Note

Tahini is sesame seed paste, available in Arabic stores, health food stores, and the international food section of large supermarkets.
